It works well when cutting vegetables, fruits or doing precise kitchen work. 420JS martensitic stainless steel rich with 0.15% carbon, containing min. 12% chromium, which offers high hardenability in the 54-56 HRC range, as well as strength, toughness, machinability and excellent corrosion resistance. The high carbon content creates chromium carbide compounds for wear resistance and edge retention after hardening. Due to its high hardness, steel is suitable for making cutting tools, knife blades and medical instruments.
